The fact that Bisbee residents are willing to drive to Sierra Vista to eat dinner is a sure sign that the food at this southwestern restaurant is some of the best in the region. Rivaling Cafe Roka in creativity, Adobe specializes in south-of-the-border flavors. There's adobo-rubbed pork tenderloin with chipotle-spiced sweet potatoes and bourbon-pecan glaze, chile-crusted rack of lamb with prickly-pear sauce, and halibut encrusted with fresh cilantro and coriander seeds. To start things off, try the scallop-and-mango ceviche. You'll find this restaurant near the turnoff for Ramsey Canyon.
