Tilth

Tilth is one of the nation's only restaurants to receive organic certification from Oregon Tilth (an organization that sets organic standards), but don't confuse organic with granola-crunchy hippie food. Chef Maria Hines, one of Seattle's most creative chefs, oversaw the kitchen at the W Seattle's acclaimed Earth & Ocean before opening this restaurant in a cute little cottage in the Wallingford neighborhood. The menu emphasizes fresh, seasonal ingredients in dishes that seem simple yet are packed with flavor. While the menu changes with the seasons, you can almost always count on finding the mini duck burgers on the menu.
