Just like St. Croix itself, a “cultural callaloo,” as one person put it, this is fusion on steroids. But it works, and this stylish bistro is a delightful place to dine, as the chefs take the food seriously. You can pinball from Thai curries to grilled fajitas to housemade egg rolls to fish tacos to maple-teriyaki pork tenderloin and not go wrong with any of it. Savant has only 20 candlelit tables, so call for a reservation as far in advance as you can.
