Jamaica-born chef Verral Marshall infuses the island's local cuisine with his own spice and flair. Installed around the pool area of Horizons Villa Resort, steeply uphill from the Marriott, and built on the foundations of the ruined, long-gone British-built Fort Tyson, his restaurant overlooks Frigate Bay and the relatively nearby island of Nevis. It's quite romantic at night, with beautifully laid tables, flickering candles, and a definite sense of very hip and very romantic charm. You'll get a warm welcome, excellent service, and good food. The fish depends on the catch of the day, but menu items that are usually readily available include crab cakes in roumoulade sauce; seafood "coquille St. Kitts" in a white wine-and-cream sauce; seared scallops in olive oil with butter-lemon sauce; and roast of duck with raspberry sauce. Prices are a bit steep but overall worth it for an evening out on the island.
