This hotel near Dieppe Bay is situated among the remains of a muscovado sugar factory on the northeast coast, with a good sandy beach just a short drive away. The rather isolated former plantation is 105m (344 ft.) above sea level and enjoys cool breezes from both ocean and mountains. Behind the 5 hectares (12 acres) of manicured grounds, the land rises to a rainforest and Mount Liamuiga.
A 17th-century windmill has been converted into charming accommodations, complete with private bathroom and sitting room; the boiling houses, formerly used to distill cauldrons of molasses, have been turned into a cool courtyard, where guests dine amid flowers and tropical birds. Other accommodations are in pleasantly decorated cottages equipped with modern facilities. There's no air-conditioning, but ceiling fans and cross-ventilation keep the place comfortable. Each unit, generous in size, is decorated in a Caribbean country-house style with antiques, stone or white walls, floral prints, local art, and rattan furnishings. Many bedrooms have mahogany four-posters; all have fine linen. Bathrooms are superb, with plenty of shelf space, toiletries, and tub/shower combinations.
