This is the hottest restaurant on St. Thomas, surpassing all the competition in town. A panoramic view of Charlotte Amalie and a historic setting are minor benefits -- it's the cuisine that matters here. Hervé P. Chassin, whose expertise has touched such stellar properties as the Hotel du Cap d'Antibes, is a restaurateur with a vast classical background. Here, in his own unpretentious setting, he offers high-quality food at reasonable prices.
There are two dining areas: a large open-air terrace and a more intimate wine room. Contemporary American and classic French dishes are served, many with Caribbean touches. Start with the pistachio-encrusted brie, shrimp in a stuffed crab shell, or conch fritters with mango chutney. From here, you can let your taste buds indulge in such treats as the house special, bouillabaisse, or a delectable black sesame-crusted tuna with ginger-raspberry sauce. Well-prepared nightly specials of game, fish, and pasta are also featured. Desserts here are equally divine -- you'll rarely taste a creamier crème caramel or a lighter, fluffier mango or raspberry cheesecake.
