Local Specialties Decoded

Kindziuk is a type of deli meat made from chopped and seasoned sirloin cooked in a pig's stomach. Kartacze are chubby potato dumplings filled with meat or lentils. Potatoes are also transformed into babka ziemniaczana (potato terrine) and kiszka ziemniaczana (potato sausage). The indigenous fish are sielawa and sieja. For dessert, you'll see the pyramidal sekacz everywhere. The batter (whipped up from 40 eggs, 1kg/2 1/4 lb. flour, sugar, butter, lemon juice, and vanilla essence) is poured over a rotary spit and baked layer by layer, creating the characteristic rings while the dripping dough hardens into spiky stalactites.
