Upstairs in the trendy Establishment Hotel complex you'll find est., a restaurant that culinary luminary Peter Doyle has melded into a Sydney icon. The decor is a sensual masterpiece, with more white columns and rich felt-brown carpets adding to an ambience already sexed up by the coolest lounge music. est. won the ultimate score of three "hats" in the Sydney Morning Herald's Good Food Guide in 2004, 2005, 2006, and 2007 (only eight restaurants in Sydney received this score in 2007). It was also honored as Restaurant of the Year in 2006. Dishes that make an appearance on the menu include grilled rock lobster with herbs and lemon butter, and juniper-crusted saddle of venison, with beet-root purée, potato, and semolina gnocchi. It's more laid-back on the top floor, where you'll find the city's best sushi bar -- a trendy raw-fish and rice place with one long table bathed in natural light called Sushi E. This is partitioned off from Hemisphere -- a moody drinking place strung out with leather armchairs and comfy sofas.
