House music, of course, is the name-of-the-game at this below-ground offshoot of the Establishment Hotel, the city's trendiest historic hot spot. The surrounds, which include three bars on two levels, attract models and film stars when they are in town. Dress casual but designer. Open Friday and Saturday from 10pm until 6am.
