An elegant fine-dining restaurant, the Cosmopolitan is also casual enough for a relaxing meal after a hard day on the slopes. The decor is modern and comfortable, and there's a delightful enclosed patio. The dinner menu includes a variety of dishes -- beef, fish, lamb, duck, and vegetarian -- all prepared with an innovative flair by chef-owner Chad Scothorn. Recommended dishes are the sesame grilled wild king salmon with shoestring sweet potatoes, sesame vegetables, and seaweed; and the all-natural Colorado lamb loin with polenta, grilled eggplant, and roasted red pepper rouille. The wine list -- there are more than 200 wines -- has received the "Award of Excellence" from Wine Spectator magazine.
