This chain of refined northern-cuisine restaurants, founded at the ski resort of Cortina about 2 hours north of Treviso in the Dolomites, is set in a modern series of rooms with odd murals and a ceiling trompe l'oeil frescoed with vines. Its longtime regular customers tend to be nearing (or beyond) retirement, but the cooking remains fresh, if solidly traditional and a bit overpriced. The specialty is linguine verdi tradizione toulá (green noodles in a cream and prosciutto sauce baked under parmigiano), though they also feature risotto with clams and wild asparagus, spaghetti with caviar and cherry tomatoes, and chateaubriand in a béarnaise sauce.
