He has a surprising list of delicacies under his chef's toque, including a main course of succulent filet of chicken breasts to which smoked herring and a fruity tomato sauce laced with star fruit is added. The dish is accompanied by dasheen, a locally popular root vegetable. It is not just his main dishes but also his appetizers that show care for quality produce and taste. Try his curried fresh crab on a shell filled with tasty miniature dumplings. The dish is scrumptious, as are his freshly made desserts that always delight you even as you take in the calories.
