An evocative 200-year-old stone tavern is home to one of the most creative and pleasurable restaurants in the entire Hudson Valley. Perched on the edge of the Catskills, the restaurant is the work of executive chef John Novi, who for more than 30 years has used fresh local products to fire his imagination. The restaurant couldn't be better looking; it rambles throughout a series of intimate and sumptuous dining rooms with roaring fires and elegant place settings. The menu, which changes daily, is either a la carte or by three- (not available on Sat), five- or seven-course prix fixe; entrees are on the order of sea bass filet with roasted-red-pepper cellophane noodles, or goat meat barbecued with black-bean Polish prosciutto strudel. For an incredible experience, reserve a table on the balcony and watch the kitchen from above. Downstairs in the atmospheric wine cellar is a more informal, but also excellent, bistro and bakery, called Chefs on Fire (it features a large wood-fired brick oven). It's open for lunch and dinner Wednesday and Thursday and breakfast, lunch, and dinner Friday through Sunday. If you want to stick around for another meal, ask about the charming cottage rooms across the street and next door.
