Opened by two city dwellers disillusioned with the rat race, Prokopi has fast become the hub of Ürgüp nightlife. The bar, which occupies the central court of a former han (caravansary), is unexpectedly chic, but what do you expect from an artist and a former PR executive from Istanbul? High-backed wooden stools line the island bar, but the tables for two stashed in the candlelit cave section at the back are especially romantic. There's also a breezy upper terrace, and pretty soon the cozy upstairs workshops will open as a restaurant. Summer daily 11am to 5am; winter daily 5:30pm to 3am.
