The day Pasta e Vino opened its doors to the public, it became immediately clear what Valparaíso had been missing all these years: a warm, intimate ambience, fabulous cuisine, and owner-attended service. Pasta e Vino virtually launched the culinary metamorphosis in Valparaíso, and it remains the best restaurant in this city -- the reason why you'll need to make reservations days in advance. Pasta e Vino is the brainchild of a young Chilean and his Italian wife, the restaurant's chef and a woman who really understands flavor combinations and technique. The last time I was here, we ordered ginger-lime clams, squid risotto, plump salmon ravioli, a fresh green salad, and a crisp chardonnay from their outstanding wine list. I can't remember the last time I enjoyed a meal so thoroughly. The ambience is exposed brick walls and sophisticated chic, but wooden tables and a lively atmosphere keeps the restaurant down-to-earth.
