Diva's triple-tiered dining room with a giant wall of glass brick in the rear makes for an elegant dining experience. This is arguably the best hotel restaurant in Vancouver, yet it has a life of its own and attracts savvy diners who appreciate attentive service and dependably marvelous food. The menu draws from the best of fresh seasonal ingredients and takes a light, international approach to spices and seasonings. If you're looking for something to write home about, try the sumptuous six-course tasting menu. Depending on the season, it might include New Zealand abalone on ice, pan-seared Quebec foie gras, shark's fin and Dungeness crab soup, Nova Scotia lobster with sweet-and-sour sauce, sautéed crispy rack of lamb, and a sweet yam pancake with maple vanilla ice cream. Diva's wine list is regularly rated one of the best in town.
