Ever wonder how fresh your noodles really are? At Sha-Lin, you can watch the noodle chef make them right before your eyes. Unique for Vancouver, Sha-Lin is one of the few places where each order of noodles is made from scratch. The chefs mix, knead, toss, stretch, and compress the dough until it almost magically gives way to thin strands. Two or three dishes make a satisfying meal for two; choose from a wide variety of meat and vegetable dishes. For a little entertainment, order the special tea, and watch the server pour it from a meter-long (3-ft.) pot originally designed to allow male servants to maintain a polite distance from an 18th-century Chinese empress.
