Blue Water Cafe in Yaletown has become one of Vancouver's hottest restaurants. If you had to describe this busy, buzzy place in one word, it would be fresh, as in fresh, seasonal seafood; only the best from sustainable and wild fisheries makes it onto the menu. If you love sushi, the raw bar under the direction of Yoshihro Tabo offers up some of the city's best sushi and sashimi. Frank Pabst, the restaurant's executive chef, creates his dishes in another large open kitchen. For starters, try a medley of Kushi oysters with various toppings, a sushi platter, or smoked sockeye salmon terrine with salmon caviar, crème fraîche, and red-onion relish. Main courses depend on whatever is in season: It might be spring salmon, halibut, Dungeness crab, and flying squid served with couscous, chickpeas, green onions, tomatoes, and harissa vinaigrette, or B.C. sablefish caramelized with soy and sake. The desserts are fabulous, everything from homemade sorbet to warm dark Cuban chocolate cake. A masterful wine list and an experienced sommelier assure fine wine pairings.
