One of Vancouver's favorite restaurants, Chambar occupies an intriguing space in a kind of no man's land on lower Beatty Street between Yaletown and Gastown. Michelin-trained chef Nico Scheuerman and his wife, Karri, have worked hard to make the place a success, and plenty of plaudits have come their way. The menu features small and large plates. Smaller choices might include mussels cooked in white wine, bacon, and cream (or with fresh tomatoes); halibut and candied ginger beignet; or green and white asparagus salad. Main courses feature market-fresh options such as waterzooi (bouillabaisse) with prawns, scallops, mussels, and halibut, or a tagine of braised lamb shank with honey. For dessert, try the classic Belgian chocolate mousse or the hot mocha soufflé. Chambar specializes in Belgian beers, some 25 varieties in bottles and on tap.
