Roots Restaurant and Bar

Although it is located in a shopping center a few miles east of Vancouver on the outskirts of the town of Camas, Roots is by far the best restaurant in the Vancouver area. With its stylish interior, house-infused martinis, and emphasis on seasonal ingredients, this place is hip enough to survive in Portland's trendy Pearl District. On a recent visit, I had an entree of seared halibut atop sweet corn and local chanterelles, a preparation that that was both simple and bursting with delicate flavors.
