Victoria has plenty of pubs, but The Guild is aiming to kick things up a notch. Chef-owner Sam Benedetto, formerly of Zambri’s, spent a couple of years in England, studying the best modern gastro-pubs, and that’s what he’s aimed to create here. And it works. For starters, The Guild is located in a 140-year-old former warehouse with the original oak wainscoting, moldings, and ceiling, as well as a big antique bar and framed blackboard menus. A dozen ever-changing taps pour some of the West Coast’s best craft ales, while beers from around the world are available by the bottle. (There’s wine and cocktails, too, but this place is really all about the beer.) The menu features classic English pub fare done exceptionally well by chef-owner Sam Benedetto, formerly of Zambri’s: Welsh rarebit, black pudding, fish pie, and some of the best fish and chips in the city.
