The fact that the Val d'Isère is a notable French restaurant is somewhat obscured by the multi-tasking menu's many feints. Look behind the pasta and pizza to find Alsatian classics from a hearty regional cuisine that will warm you even on the coldest of days. Start with the goat-cheese soufflé, followed by braised duck on a bed of figs, red cabbage, and polenta with port-wine reduction. A classic choucroute (sauerkraut with sausages and pork) will be welcome after a long day on the slopes. For lighter fare -- perhaps on a summer day on the patio -- consider seared scallops with candied lemon-ginger sauce, accompanied by a glass of Riesling. The desserts are luscious.
