The suave dining room at the upscale Four Seasons Resort Whistler celebrates "fire and ice" -- fire from the stone fireplace and dramatic backlit onyx panels, and ice from the display of fresh fish and shellfish that greets dinners. The design may be high-concept but the food is more easygoing and hearty. For appetizers, fresh shucked oysters or seared scallops with cauliflower puree are outstanding, and old-fashioned chicken supreme is made new again with local corn and wild mushrooms. Fresh lobster, prime Canadian steaks, spit roast meats, and fresh fish entrees round out the menu. Combine the a la carte selections into three- (C$39/US$31) or four- (C$45/US$36) course dinners -- a great value for sublimely prepared food.
