A restaurant with a stated philosophy is usually to be avoided, but when your server summarizes the culinary thinking behind FUDE, it's encouraging. As much as possible, all food is made in-house (for instance, all the breads and desserts), and ingredients are sourced in Manitoba. Beyond this, the philosophy goes, eating FUDE ought to be fun! FUDE's culinary zing comes from its sophisticated forays into world cuisine. The menu is divided into sections: Flat, for pizza; Twisted, for pasta; and Comfort, for entrees such as pork loin with huckleberry gravy, and the house specialty, grilled chicken breast with chocolate-chipotle pepper sauce. In summer, diners can sit on the second-floor deck above bustling Osborne Street, just south of downtown. FUDE is a splendid example of the cuisine alchemy popular in Winnipeg.
