In summer, herbs and vegetables often come from the hotel’s own gardens, and wild game is a specialty. The wait staff, many of them local Native American men and women, will have plenty of specials to suggest, making use of fresh, authentic ingredients. On top of all this, you can watch the trains rolling by just outside the window while you dine.
