The Jackson House dining room is a modern addition to the original inn . Its centerpiece is a 16-foot-high stone fireplace, and it boasts soaring windows with views of the gardens. Men may feel most comfortable in a sports coat, though a jacket is not required. Once settled, you'll sample some of the most exquisite dishes in New England, ingeniously conceived, deftly prepared, and artfully arranged. The three-course meals begin with offerings such as Maine crabmeat and field greens with shaved fennel. The main courses do an equally good job combining the earthy with the celestial. Expect dishes such as crispy-skin salmon with a shiitake compote, or an Angus filet with creamy white-corn polenta and a three-onion marmalade. For dessert, the banana-walnut soufflé is delicate, and the crème brûlée with a cranberry compote is striking. This is a meal that will linger long in your memory.
