But chef Quique Vásquez is a whiz at constructing elegant dishes from simple, even humble ingredients. Tables flip frequently here—tables are in high demand, and reservations are very much in order. One of the most popular dishes is a soupy black rice loaded with fish, local shrimp, and octopus from the nearby rías. The drinks list is more than equal to the food, with outstanding local ciders and beers from the barrel as well as a panoply of Rías Baixas white wines.
