Hôtel Paulin
Ask owner Gerard Paulin to stand beside the old photograph of his grandfather in the reception area of this three-story Victorian-era hotel, and you’ll see the family tree come alive. Built in 1891, the Paulin was Caraquet’s first hotel. It’s still the best in town. Overlooking the bay, the beautifully restored country inn has an old-world France feel, both for the decor and the hospitality. Rooms and suites are comfortably furnished with antiques. (Four luxury suites on the top floor are more stylish and contemporary.) The hotel’s first floor houses a handsome, well-regarded restaurant ★★ where Chef Karen Mersereau prepares original seafood, local, foraged, and fusion dishes with French influences. This hotel is especially known for packages such as food-and-wine getaways. Ask about activities such as cooking classes where you can forage for wild foods to be used for your dinner.
