The building is nearly as old as the nearby fortifications, but inside it’s a modern, industrial-style space. The cooking may be based on classic French dishes, but again this is a modern take with added Asian influences that subtly enhance the flavors. Start with heritage tomato tarte tatin topped with cucumber and wasabi sorbet, then move on to pan-fried tuna with Chimichurri sauce.
