Ambergris Caye’s only rooftop restaurant is two miles north of town atop the Grand Caribe Belize, one of the largest hotels on the island. What this place lacks in décor  (some may call it modern, I call it bare-looking), it makes up for in panoramic views of the sky and the sea. The dishes incorporate ingredients and recipes that you might find in an upscale seaside restaurant in the U.S., like cashew crusted grouper and fish tacos. Favorites include blue cheese crusted filet mignon, the changing array of handmade pastas, and the coconut-pineapple curried shrimp. Rain Restaurant is particularly welcoming to vegetarian guests with a number of thoughtful options regularly on the menu.
