Pure magic. Our favorite fine-dining destination on Anguilla looks out onto the powdery sands of Meads Bay. Inside the warm and inviting open dining room, ceiling fans keep sea breezes circulating. Jacala is the creation of two Malliouhana veterans, who did not have to venture far down the shore to put their own beach-casual spin on haute dining. You are in their very capable hands as they serve up elegantly unfussy versions of classic French food. Start with a rich conch chowder (with a hint of fennel) or the steak tartar, prepared tableside. For your entrée, sample fresh-caught snapper, grilled or prepared meunière style. Local crayfish (Caribbean spotted lobster) shows up any number of delicious ways: grilled, in a risotto, or mixed with avocado in a fabulous salad. A fettucine with tomato, basil, and garlic doesn't sound like much, but here it simply rocks. Reserve in advance to avoid heartbreak; little Jacala seats only 35 people at a time and is booked up quickly.
