Global fusion with locavore ingredients: that's the formula behind Laughing Seed, one of the first vegetarian restaurants in Asheville and still its most beloved (it's been voted "Best Vegetarian" restaurant by the local paper for twelve years running). So you can expect Middle Eastern hummus on the menu, but here the chickpeas will be mixed with local beets for a bright red bowl of deliciousness. There are burritos, with tofu substituting for the meat and Greek feta cheese instead of the more bland Mexican variety. Or being south of the Mason-Dixon line, you might go for BBQ, here done with tofu and topped with a tahini-mustard sauce. Fusion, fusion, fusion! Those who only eat raw foods are also catered to, with a wide variety of salads, and such creative fare as "pasta" made from thinly sliced zucchini and stuffed with fermented nut cheese.
