Bo.Lan was founded by a husband and wife team, Thai-born chef Duangporn ‘Bo’ Songvisava and Australian-born chef Dylan ‘Lan’ Jones, who met while working at a top Thai restaurant in London. The menu comes from the pair’s love of this cuisine and country. Ingredients are locally sourced and sustainable, with the restaurant working hard to achieve its zero carbon goal.  And recipes were arrived at after much study of ancient cookbooks, to better represent Royal Thai cuisine. That means that the spice levels here are authentic and send even locals reaching for water. It’s important to dine with someone who shares your spice tolerance because the set menus (à la carte menus are available only at lunch) are designed to share.
