Spend an afternoon walking around the streets of Bangkok and you’ll see many woks bubbling with cracking-hot oil and trays of crisply fried chicken cooling on racks. Thai people love their fried chicken (but don’t we all?) and the best place for it is this open-air shop near Lumpini Park on a street called Soi Polo. The owners double fry the chicken and add garlic, which makes these birds irresistible. The crispy skin is crunchy without being overcooked, and the meat retains a perfect level of tender juiciness.
