Spend an afternoon walking around the streets of Bangkok and you’ll see many woks bubbling with cracking-hot oil and trays of crisply fried chicken cooling on racks. The owners double fry the chicken and add garlic, which makes these birds irresistible. The crispy skin is crunchy without being overcooked, and the meat retains a perfect level of tender juiciness.
