The Neapolitan wood-fired pizza oven, a 6,000-pound beauty made by third generation oven-makers, was imported from Italy complete with hand-painted glass tiles. The pizza it makes is sublime, a delicate thin crust topped with fresh, unusual ingredients like crushed potato with garlic cream and bacon; pistachio pesto; or the more traditional sweet sausage. The pasta, dressings, sauces, and gelato are all made in-house, and the restaurant even has a roof garden for the organic vegetables used in salads and on the pizzas. As for the flour, it’s imported from Italy. The business started as a mobile pizza shop that turned up at parties, and thus the name, which means “vagabond” in Italian.
