The oldest in Bayonne, this hotel on the Vauban ramparts is only a few minutes from the cathedral and the pedestrianized old town. Two suites (at a higher price) are in the turret and feature exposed stone walls, while the other rooms have soothing color palettes in neutral tones. The hotel’s excellent restaurant offers creative local food, and its cozy bar has a wide range of wines. Downside? Some noise between rooms due to thin walls.
