Inventive preparations of fresh, locally-caught fish, are the lure at this swank sushi bar just upstairs from Port O’ Call on Front Street. In fact, we’d say Pearl has the very best sushi in Bermuda. Many of the dishes on the menu were invented here, like the rockfish usuzukuri, made with thin slices of local rockfish dressed in rice wine vinegar, toasted sesame oil, pickled onion and ginger or the hamachi carpaccio, local fish drizzled with jalapeno chili, garlic oil, cilantro and ponzu sauce. There’s plenty to choose from, but often the best strategy is to allow the chefs to prepare you something special from whatever’s been biting today. For seating, guests have a choice of the second-story outdoor balcony (nice views of the harbor) or the bustling dining room (nice views of the expert sushi chefs working their magic).
