Once you stumble into Plaza Nueva, it’s hard to miss Victor Montes, which dominates the plaza with tables in good weather and has plenty of indoor seating in three packed dining rooms in back. And those are just for the sit-down diners, who swarm in for home-cooking favorites like fish and meat stews, and the myriad Basque preparations of different flaky white fish. Salads are copious and every plate comes with fresh vegetables. The bar has a grand selection of pintxos or raciones, ranging from simple tastes like Idiazabel cheese with walnut and honey to stewed meatballs to small plates of fried squid or cod nuggets.
