Fleur de Loire
Star chef Christophe Hay pays homage to his native Loire Valley in his new (and quite stylish) hotel and gastronomic restaurant. Opened in 2022, every detail was carefully considered in this impressive transformation of a former 17th-century residence of Gaston d’Orléans, the brother of King Louis XIII. The banks and waters of the Loire River are cleverly represented through artwork by local artists, vegetal wall panels and mellow-toned textiles are used in common spaces and the spacious rooms. Guests can further absorb the Loire, and exquisite views the city and castle, from the private terraces of suites, or while relaxing next to the outdoor pool. Hay’s love of his region’s terroir and his dedication to sustainability are also celebrated in his two-Michelin-starred restaurant and more casual bistro, with the bounty of the river and its surrounding lands—including from the hotel’s own vegetable gardens—highlighted in each dish. The results are sublime.
