Meaning “morning” in Japanese, this restaurant has dawned a new era for Loire cuisine. Since 2013, the efforts of chefs Fumiko and Anthony Maubert at this restaurant have paid off nicely in the form of a highly coveted Michelin star. Earning their chops at France’s top restaurants, the couple has fused their talent and culinary backgrounds in their contemporary menus with an ever-present Japanese aura. Their delightful creations, with poetic names like “garden and nature in perfect harmony” and “sweet voyage,” revolve around local and seasonal ingredients such as strawberries or mushrooms personally picked by the chefs, fresh chèvre straight from the cheese farm or sandre or trout from the Loire River, which the relaxed yet sophisticated dining room overlooks.
