Two chefs with experience at some of Latin America’s best restaurants, Mexican Sergio Meza and Argentine Nicolás Lopez, who met while working in Chile, have built what is probably Colombia’s most ambitious restaurant. Translating to “Villains in Bermuda shorts,” the restaurant, which opened in mid-2016, is set on three floors of a cool, restored house in Chapinero Alto with exposed bricks painted white, wood floors, and marble countertops. They work with small regional producers, creating sophisticated menus only from what is in season and available. If they only have three portions of one ingredient, only one table that ordered the tasting menu will get it. On the second floor is an a la carte menu and cocktail bar where you can come without reservations.
