Located in the space formerly occupied by Boulder burger standby Tom's Tavern, Salt opened its doors in 2009 and has dazzled Boulder ever since. The emphasis is on fresh, local ingredients, with the kitchen plating up roasted beet salads, sweet pea ravioli, and saffron risotto with calamari and mussels, as well as flatiron steaks that have been braised for 7 hours—a lot of attention goes into preparation here. The same can be said for the cocktails, crafted by the city's top mixologists. Make mine a Mountain Manhattan.
