Casa Ojeda

Established in 1912, Casa Ojeda is the Burgos standard-bearer for classical Castilian cuisine. Located in the same building with a modestly priced bar-cafe and a downright inexpensive deli by the same name, Casa Ojeda’s spacious dining room features service as classical as the menu and a wood-burning stove to warm up the room in chilly weather. Spit-roasted meats are excellent (if expensive); the kitchen also prides itself on modest plates like tongue with pickled wild mushrooms, oven-roasted blood sausage with stuffed red peppers, and crab salad with noodles and grated black truffle. Reserve at least 3 days ahead.
