Parador de Cáceres

One of the oldest paradors in the system, this state-run beauty occupies two tastefully restored medieval palaces whose clean white walls and plain granite doorways give it a subtly contemporary feel—until you bump into the suit of armor in the hall. The guest rooms are spacious and understated, with mid-century style furniture, well-appointed bathrooms, and 21st-century climate control. Given the privileged setting, low-season room deals are a bargain. If you plan to splurge on dinner at Atrio nearby, staying here is a good way to offset costs. But the in-house restaurant, specializing in regional dishes including acorn-fed Ibérico pork with local Torta del Casar cheese sauce, is worth considering too. In summer they lay out a few tables on the leafy patio—reservations are essential.
