While traditional fish restaurants still predominate, a new wave of modern cooking is emerging. Dutch chef Léon Griffioen and his sommelier wife Paqui Márquez run the city’s first Michelin-starred restaurant in a small, unassuming bar in the old town. Two tasting menus are offered, exploring the culinary history of this age-old city, and although the cooking and presentation are ultra-modern, you’ll recognize traditional themes. Highlights include sublime red prawn fritters, estuary gilt-head bream, mountain cheeses, and clever sherry pairings. The restaurant’s name nods to the old and the new. It means Bar Code.
