Baja Tacos specializes in gigantic fish tacos stuffed with either halibut or Copper River red salmon. The kitchen and counter are inside on old red school bus, parked alongside a cedar-sided cabin that serves as the dinning room. The owners (who retire to Baja California each winter, which is where they’ve picked most of their recipes, as well as the sombreros and the saddle blankets adorning the dining roomplace) do trades with fishermen for much of their fresh fish, so there’s always chance that the guy in XTRATUF boots and a sweatshirt sitting next to you is the dude who netted your taco filling. With its free wi-fi and home-baked muffins and biscotti, it’s a primo morning coffee nook too.
