We’re talking mofongo with fried pork rind Bayamón style, Ponce’s excellent variation on the ubiquitous sautéed dorado filet, and chicken fricassee recipe from the mountain town of Aibonito. It’s a festive place: Servers wear folkloric dress and local music is played. The weekend buffet brunch is quite popular.
