This Japanese restaurant, tucked away behind the Usher Hall, is understated, restrained, and sleek. Leith-based design agency Four-by-Two created the cool minimalist interiors inspired by contemporary Tokyo sushi bars. It all feels pared back—until you spot the overblown stylized floral wall. After a few sakes, however, you might be tempted to let your hair down. Perch at the counter, where you can watch the Japanese-trained chefs at work, or hide away in a private booth and tuck into the best sushi and sashimi in town along with crispy tempura and grilled teppanyaki dishes such as the mouthwatering miso-glazed grilled eggplant.
