From pop-up to permanent fixture. Chefs Edward Murray and Dale Mailley's practice session at the Edinburgh Farmers market was just a stepping-stone for the 2012 launch of their communal dining hotspot in a 19th-century stone cottage in the bosky Royal Terrace Gardens. The country flavor of this old bothy (rustic shelter) is enhanced by the old wooden tables, jars of wildflowers, mismatched china, church chairs, and an old record player churning out jazz. The daily changing menu, scrawled on a blackboard outside, features seasonal and local ingredients—so local in fact, that some of the herbs and vegetables are plucked from the restaurant's own patch for the delicious dishes such as mackerel tartare with rhubarb and sea vegetables.
