De Castellane gives you a more comprehensive view of how champagne is actually produced than the two houses recommended below. You see workers doing it all—corking, labeling, even removing sediment. The on-site museum may be a bit dull, but the climb to the tower (237 steps) for a panoramic view of the area is not. The tower is from 1904 and has become an Epernay landmark.
